I was a new military bride when we moved to Cocoa Beach Florida in the late sixties. Within a week I was given my first introduction to Key Lime Pie, and acquired my first recipe (which I still have). Key Lime Pie was named as the state pie for Florida in 2006. It is made with Key Limes. This tiny limes are smaller than the Persian Limes we find most often in the stores. The pie itself is made of the juice of the limes, egg yolks, and a can of sweetened condensed milk. It can be topped with either meringue or whipped cream, on top of a crust, or not on a crust. There are many variations and are all delicious. The pie is most often made with the Persian Limes, since Key Limes are hard to find. The color of the filling will be more green in this case. The cream filling of pies made with the Key Limes are yellow in color because the limes themselves are pale yellow inside. This sign was taken in Cocoa Beach Florida, across from Ron Jons Surf Shop.
